Pai means "white" and Mu Tan "peony". The tea is sun dried and then carefully roasted leaving the leaf whole with many silvery white tips. It is said that this tea has many healing properties. The clear fresh taste is very soft, scented, flowery and mild. No wonder that Pai Mu Tan is one of the best loved Chinese teas and an excellent introduction into the world of over 1000 Chinese teas. 1-2 teaspoons per cup with 195° hot water and leave for 2 min. This tea does not become bitter and can be kept indefinitely.
